Koseret / ኮሰረት
Koseret is the herb that makes niter kibbeh taste like niter kibbeh. Dried leaves of Lippia adoensis, a shrub of the Ethiopian highlands, it sits somewhere between oregano and lemon verbena — savoury and slightly resinous, with a cool minty lift and a clean bitterness underneath.
Its traditional home is spiced butter: a handful of koseret simmered with cardamom, korarima and turmeric is what gives niter kibbeh its unmistakable perfume, and what separates a good wat from a flat one. But it works far beyond that. Cooks add it to shiro, misir and doro wat, rub it into kitfo, and steep it as a plain infusion in the evening.
Away from Ethiopian cooking, treat it as you would oregano with more character — on roasted vegetables, in lentil soups, with lamb, or in any slow-cooked dish that wants an aromatic backbone.
